Urgent requirement: we are hiring a meat trimmer in Clay County, Kentucky. The role involves keep HACCP hygiene records and sanitise the block and tools; portion steaks, chops and cutlets to the ordered weights; weigh, price and label cuts for the display case; trim fat, sinew and silver skin off the cuts; sharpen and hone knives on a steel and whetstone. Ideal candidate: • Confident knife skills and safe blade handling • Food hygiene / HACCP certificate • Physically fit to lift carcasses and stand all day 2+ years on the tools preferred.
