Great opportunity: we are hiring a trainee butcher in Cherokee County, Texas. You will work in a hotel or restaurant butchery. You should have: • Confident knife skills and safe blade handling • Food hygiene / HACCP certificate • Quick and accurate on the weighing scales and order maths Day-to-day duties: • Keep halal cuts separated and clearly handled • Keep HACCP hygiene records and sanitise the block and tools • Season and marinate meat on request • Dress the chilled counter and rotate stock by date • Break down beef, mutton and chicken carcasses into primal cuts • Run the band saw to cut cleanly through bone Part-time with flexible hours.
