Immediate opening: we are hiring a counter butcher in Thurston County, Washington. You will be based at a wholesale meat market. Day to day you will debone shoulders, legs and loins with a boning knife; dress the chilled counter and rotate stock by date; trim fat, sinew and silver skin off the cuts; run the band saw to cut cleanly through bone; sharpen and hone knives on a steel and whetstone; vacuum-pack and wrap customer orders. You should have: • 2+ years experience working as a butcher • Able to identify primal cuts of beef, mutton and poultry Meals and transport allowance provided. Full-time with occasional weekends.
