Day to day you will run the band saw to cut cleanly through bone; dress the chilled counter and rotate stock by date; break down beef, mutton and chicken carcasses into primal cuts; weigh, price and label cuts for the display case; monitor chiller and freezer temperatures to keep the cold chain; take customer orders and advise on cuts and cooking.
