Now hiring: we are hiring a trainee butcher in Fayette County, Texas. You will work at a busy retail butcher's shop. Day to day you will vacuum-pack and wrap customer orders; dress the chilled counter and rotate stock by date; debone shoulders, legs and loins with a boning knife; keep halal cuts separated and clearly handled; portion steaks, chops and cutlets to the ordered weights; trim fat, sinew and silver skin off the cuts. Ideal candidate: • Able to identify primal cuts of beef, mutton and poultry • Able to use a band saw, grinder and sausage filler Freshers welcome — about 6 years of practice is enough. $4,200 per month, negotiable for the right hands.
