Sausage maker — Fisher County

We are recruiting: we are hiring a sausage maker in Fisher County, Texas. You will be based at a wholesale meat market. Ideal candidate: • 2+ years experience working as a butcher • Able to use a band saw, grinder and sausage filler • Quick and accurate on the weighing scales and order maths The role involves: • Trim fat, sinew and silver skin off the cuts • Mince meat and prepare keema on the grinder • Debone shoulders, legs and loins with a boning knife • Portion steaks, chops and cutlets to the ordered weights • Break down beef, mutton and chicken carcasses into primal cuts • Take customer orders and advise on cuts and cooking 5+ years on the tools preferred.
