Requirements: • 2+ years experience working as a butcher • Food hygiene / HACCP certificate • Comfortable working in cold rooms and chillers Day to day you will run the band saw to cut cleanly through bone; portion steaks, chops and cutlets to the ordered weights; debone shoulders, legs and loins with a boning knife; monitor chiller and freezer temperatures to keep the cold chain; sharpen and hone knives on a steel and whetstone; season and marinate meat on request. 4+ years on the tools preferred.
