Immediate opening: we are hiring a trainee butcher in Douglas County, Illinois. You should have: • Able to use a band saw, grinder and sausage filler • Food hygiene / HACCP certificate On the job you will handle: • Take customer orders and advise on cuts and cooking • Monitor chiller and freezer temperatures to keep the cold chain • Keep HACCP hygiene records and sanitise the block and tools • Run the band saw to cut cleanly through bone • Keep halal cuts separated and clearly handled • Break down beef, mutton and chicken carcasses into primal cuts Six days a week, one day off.
