Requirements: • Physically fit to lift carcasses and stand all day • Comfortable working in cold rooms and chillers • Confident knife skills and safe blade handling The role involves: • Break down beef, mutton and chicken carcasses into primal cuts • Portion steaks, chops and cutlets to the ordered weights • Stuff and link fresh sausages with casings • Keep halal cuts separated and clearly handled • Weigh, price and label cuts for the display case • Debone shoulders, legs and loins with a boning knife 6+ years on the tools preferred.
