The role involves: • Run the band saw to cut cleanly through bone • Break down beef, mutton and chicken carcasses into primal cuts • Weigh, price and label cuts for the display case • Sharpen and hone knives on a steel and whetstone • Dress the chilled counter and rotate stock by date • Stuff and link fresh sausages with casings You should have: • Able to identify primal cuts of beef, mutton and poultry • Food hygiene / HACCP certificate • Clean, presentable and friendly at the counter Freshers welcome — about 3 years of practice is enough.
