Urgent requirement: head butcher (Indiana)

We are recruiting: we are hiring a head butcher in Perry County, Indiana. You will work at a wholesale meat market. You will monitor chiller and freezer temperatures to keep the cold chain; stuff and link fresh sausages with casings; dress the chilled counter and rotate stock by date; season and marinate meat on request; run the band saw to cut cleanly through bone; mince meat and prepare keema on the grinder. What we are looking for: • Able to identify primal cuts of beef, mutton and poultry • Able to use a band saw, grinder and sausage filler • Food hygiene / HACCP certificate Full-time with occasional weekends.
