You should have: • Food handler / hygiene certificate • Knowledge of dough fermentation and proving • Understanding of food-safety and HACCP basics The role involves laminate puff and croissant dough by folding in the butter; score the top of loaves before baking; boil sugar syrup for glazes and icing; knead and develop dough by hand and in the spiral mixer.
