The role involves: • Debone shoulders, legs and loins with a boning knife • Weigh, price and label cuts for the display case • Keep halal cuts separated and clearly handled • Vacuum-pack and wrap customer orders • Run the band saw to cut cleanly through bone • Portion steaks, chops and cutlets to the ordered weights You should have: • Able to identify primal cuts of beef, mutton and poultry • Confident knife skills and safe blade handling A stable, long-term role with a friendly crew.
