What we are looking for: • Able to identify primal cuts of beef, mutton and poultry • 2+ years experience working as a butcher • Comfortable working in cold rooms and chillers The role involves weigh, price and label cuts for the display case; debone shoulders, legs and loins with a boning knife; run the band saw to cut cleanly through bone; break down beef, mutton and chicken carcasses into primal cuts; portion steaks, chops and cutlets to the ordered weights; sharpen and hone knives on a steel and whetstone.
