What we are looking for: • Quick and accurate on the weighing scales and order maths • Confident knife skills and safe blade handling • Knowledge of halal slaughter and handling where required On a typical shift you will trim fat, sinew and silver skin off the cuts; sharpen and hone knives on a steel and whetstone; weigh, price and label cuts for the display case; break down beef, mutton and chicken carcasses into primal cuts; portion steaks, chops and cutlets to the ordered weights; dress the chilled counter and rotate stock by date.
