Immediate opening: we are hiring a confectioner in Monroe County, Illinois. You will work in a bread factory. Requirements: • Knowledge of dough fermentation and proving • Basic cake decorating and piping skills The role involves load and unload the deck oven with a peel; decorate cakes with icing, fondant and fresh cream; prove dough in the proofer at the right temperature and humidity; weigh and mix flour, yeast, water and salt to the day's recipe; monitor oven temperature and baking time for each batch.
