Immediate opening: meat cutter (Illinois)

We are recruiting: we are hiring a meat cutter in Lee County, Illinois. You will work at an abattoir or slaughterhouse. Day-to-day duties: • Sharpen and hone knives on a steel and whetstone • Stuff and link fresh sausages with casings • Debone shoulders, legs and loins with a boning knife • Weigh, price and label cuts for the display case • Monitor chiller and freezer temperatures to keep the cold chain • Keep HACCP hygiene records and sanitise the block and tools Ideal candidate: • Comfortable working in cold rooms and chillers • Able to identify primal cuts of beef, mutton and poultry • Confident knife skills and safe blade handling 5+ years on the tools preferred.
