Immediate opening: we are hiring a confectioner in Grainger County, Tennessee. You should have: • Understanding of food-safety and HACCP basics • Familiar with deck, rack and convection ovens • Food handler / hygiene certificate The role involves roll out short-crust and biscuit dough; decorate cakes with icing, fondant and fresh cream; prove dough in the proofer at the right temperature and humidity; keep work surfaces and equipment clean to food-safety standards; knead and develop dough by hand and in the spiral mixer.
