We are recruiting: we are hiring a sausage maker in Addison County, Vermont. Ideal candidate: • Physically fit to lift carcasses and stand all day • Confident knife skills and safe blade handling • Clean, presentable and friendly at the counter On the job you will handle: • Break down beef, mutton and chicken carcasses into primal cuts • Dress the chilled counter and rotate stock by date • Keep HACCP hygiene records and sanitise the block and tools • Run the band saw to cut cleanly through bone • Trim fat, sinew and silver skin off the cuts • Take customer orders and advise on cuts and cooking Rotating shifts.
