What we are looking for: • Accurate at weighing and following recipes • Familiar with deck, rack and convection ovens • 2+ years' experience as a baker Day to day you will grease and clean baking trays, tins and moulds; score the top of loaves before baking; monitor oven temperature and baking time for each batch; prove dough in the proofer at the right temperature and humidity; knead and develop dough by hand and in the spiral mixer; laminate puff and croissant dough by folding in the butter.
