Counter butcher • Bernalillo County, New Mexico

Urgent requirement: we are hiring a counter butcher in Bernalillo County, New Mexico. Day-to-day duties: • Monitor chiller and freezer temperatures to keep the cold chain • Trim fat, sinew and silver skin off the cuts • Take customer orders and advise on cuts and cooking • Break down beef, mutton and chicken carcasses into primal cuts What we are looking for: • Able to identify primal cuts of beef, mutton and poultry • Food hygiene / HACCP certificate • Able to use a band saw, grinder and sausage filler Six days a week, one day off. $4,600 per month, negotiable for the right hands.
