You should have: • Confident knife skills and safe blade handling • Knowledge of halal slaughter and handling where required Your main tasks: • Keep HACCP hygiene records and sanitise the block and tools • Run the band saw to cut cleanly through bone • Monitor chiller and freezer temperatures to keep the cold chain • Mince meat and prepare keema on the grinder 2+ years on the tools preferred.
