You should have: • Good teamwork and clear communication under pressure • Familiar with North Indian, tandoor and continental cooking On a typical shift you will prepare stocks, sauces and soups from scratch; taste and adjust seasoning for consistency; label and date all prepped ingredients in the walk-in; follow cleaning schedules and wash down work surfaces; manage the tandoor and skewer kebabs; prepare the mise en place before each service.
