You should have: • Knowledge of halal slaughter and handling where required • 2+ years experience working as a butcher Day-to-day duties: • Trim fat, sinew and silver skin off the cuts • Weigh, price and label cuts for the display case • Monitor chiller and freezer temperatures to keep the cold chain • Debone shoulders, legs and loins with a boning knife • Portion steaks, chops and cutlets to the ordered weights Rotating shifts.
