Requirements: • Sound knowledge of HACCP and food safety standards • Able to stand for long shifts and work in heat • Able to read and follow recipes and dockets Day to day you will prepare the mise en place before each service; knead dough and bake breads such as roti, naan and paratha; chop, dice and portion vegetables, fish and meat; cook dishes to order on the grill, fry and sauté stations; check deliveries and rotate stock using FIFO.
