You should have: • Accurate at weighing and following recipes • 2+ years' experience as a baker • Understanding of food-safety and HACCP basics You will shape loaves, rolls, baguettes and buns by hand; monitor oven temperature and baking time for each batch; score the top of loaves before baking; rotate stock and follow FIFO on raw materials; check finished products for colour, crumb and weight; boil sugar syrup for glazes and icing.
