Dough maker • Bakori, Katsina State

We are recruiting: we are hiring a dough maker in Bakori, Katsina State. You will be based in a hotel pastry kitchen. The role involves prove dough in the proofer at the right temperature and humidity; check finished products for colour, crumb and weight; rotate stock and follow FIFO on raw materials; load and unload the deck oven with a peel; score the top of loaves before baking. You should have: • Knowledge of dough fermentation and proving • Understanding of food-safety and HACCP basics • Familiar with deck, rack and convection ovens Performance bonus on top of base pay.
