Great opportunity: we are hiring a retail butcher in Marion County, Indiana. The job is at an abattoir or slaughterhouse. On the job you will handle: • Monitor chiller and freezer temperatures to keep the cold chain • Keep halal cuts separated and clearly handled • Portion steaks, chops and cutlets to the ordered weights • Trim fat, sinew and silver skin off the cuts • Dress the chilled counter and rotate stock by date • Stuff and link fresh sausages with casings You should have: • Able to identify primal cuts of beef, mutton and poultry • 2+ years experience working as a butcher Full-time with occasional weekends.
