Your main tasks: • Debone shoulders, legs and loins with a boning knife • Break down beef, mutton and chicken carcasses into primal cuts • Keep halal cuts separated and clearly handled • Trim fat, sinew and silver skin off the cuts You should have: • Quick and accurate on the weighing scales and order maths • Able to use a band saw, grinder and sausage filler • Confident knife skills and safe blade handling 1+ years on the tools preferred.
