Head butcher — Coke County

Urgent requirement: we are hiring a head butcher in Coke County, Texas. You will be based at an abattoir or slaughterhouse. On a typical shift you will take customer orders and advise on cuts and cooking; keep halal cuts separated and clearly handled; run the band saw to cut cleanly through bone; portion steaks, chops and cutlets to the ordered weights; sharpen and hone knives on a steel and whetstone. Ideal candidate: • Able to identify primal cuts of beef, mutton and poultry • Physically fit to lift carcasses and stand all day $23 per hour, negotiable for the right hands. Rotating shifts.
