Counter butcher • Fleming County, Kentucky

Urgent requirement: we are hiring a counter butcher in Fleming County, Kentucky. You will monitor chiller and freezer temperatures to keep the cold chain; trim fat, sinew and silver skin off the cuts; sharpen and hone knives on a steel and whetstone; keep HACCP hygiene records and sanitise the block and tools; take customer orders and advise on cuts and cooking; run the band saw to cut cleanly through bone. Requirements: • Able to identify primal cuts of beef, mutton and poultry • Clean, presentable and friendly at the counter • Food hygiene / HACCP certificate Meals and transport allowance provided.
