The role involves run the band saw to cut cleanly through bone; dress the chilled counter and rotate stock by date; sharpen and hone knives on a steel and whetstone; break down beef, mutton and chicken carcasses into primal cuts; monitor chiller and freezer temperatures to keep the cold chain; trim fat, sinew and silver skin off the cuts. Requirements: • Quick and accurate on the weighing scales and order maths • 2+ years experience working as a butcher • Able to identify primal cuts of beef, mutton and poultry 4+ years on the tools preferred.
