The role involves: • Break down beef, mutton and chicken carcasses into primal cuts • Season and marinate meat on request • Trim fat, sinew and silver skin off the cuts • Portion steaks, chops and cutlets to the ordered weights Ideal candidate: • Able to use a band saw, grinder and sausage filler • Quick and accurate on the weighing scales and order maths • Able to identify primal cuts of beef, mutton and poultry Rotating shifts.
