Trainee butcher • Saline County, Nebraska

Great opportunity: we are hiring a trainee butcher in Saline County, Nebraska. The job is in a hotel or restaurant butchery. Day to day you will run the band saw to cut cleanly through bone; monitor chiller and freezer temperatures to keep the cold chain; keep HACCP hygiene records and sanitise the block and tools; take customer orders and advise on cuts and cooking; portion steaks, chops and cutlets to the ordered weights. You should have: • Physically fit to lift carcasses and stand all day • Able to identify primal cuts of beef, mutton and poultry • Able to use a band saw, grinder and sausage filler 6+ years on the tools preferred.
