You should bring able to identify primal cuts of beef, mutton and poultry; physically fit to lift carcasses and stand all day; food hygiene / HACCP certificate. The role involves vacuum-pack and wrap customer orders; portion steaks, chops and cutlets to the ordered weights; dress the chilled counter and rotate stock by date; monitor chiller and freezer temperatures to keep the cold chain; keep HACCP hygiene records and sanitise the block and tools; sharpen and hone knives on a steel and whetstone.
