Your main tasks: • Break down beef, mutton and chicken carcasses into primal cuts • Sharpen and hone knives on a steel and whetstone • Monitor chiller and freezer temperatures to keep the cold chain • Mince meat and prepare keema on the grinder • Portion steaks, chops and cutlets to the ordered weights You should have: • 2+ years experience working as a butcher • Confident knife skills and safe blade handling • Knowledge of halal slaughter and handling where required Freshers welcome — about 1 years of practice is enough.
