What we are looking for: • Knowledge of dough fermentation and proving • Familiar with deck, rack and convection ovens Day-to-day duties: • Laminate puff and croissant dough by folding in the butter • Score the top of loaves before baking • Monitor oven temperature and baking time for each batch • Proof and fry doughnuts, then glaze them 2+ years on the tools preferred.
