Ideal candidate: • Able to identify primal cuts of beef, mutton and poultry • Able to use a band saw, grinder and sausage filler • Knowledge of halal slaughter and handling where required The role involves trim fat, sinew and silver skin off the cuts; keep HACCP hygiene records and sanitise the block and tools; vacuum-pack and wrap customer orders; season and marinate meat on request; sharpen and hone knives on a steel and whetstone. 5+ years on the tools preferred.
