The role involves keep HACCP hygiene records and sanitise the block and tools; debone shoulders, legs and loins with a boning knife; monitor chiller and freezer temperatures to keep the cold chain; keep halal cuts separated and clearly handled. You should have: • Physically fit to lift carcasses and stand all day • Knowledge of halal slaughter and handling where required • Confident knife skills and safe blade handling Freshers welcome — about 4 years of practice is enough.
