We are recruiting: retail butcher (Tennessee)

Great opportunity: we are hiring a retail butcher in Monroe County, Tennessee. You will be based in a hotel or restaurant butchery. What we are looking for: • Food hygiene / HACCP certificate • Clean, presentable and friendly at the counter • Able to identify primal cuts of beef, mutton and poultry Your main tasks: • Sharpen and hone knives on a steel and whetstone • Debone shoulders, legs and loins with a boning knife • Weigh, price and label cuts for the display case • Portion steaks, chops and cutlets to the ordered weights • Keep HACCP hygiene records and sanitise the block and tools • Season and marinate meat on request Six days a week, one day off.
