Requirements: • Able to identify primal cuts of beef, mutton and poultry • Quick and accurate on the weighing scales and order maths Day to day you will take customer orders and advise on cuts and cooking; weigh, price and label cuts for the display case; sharpen and hone knives on a steel and whetstone; season and marinate meat on request; trim fat, sinew and silver skin off the cuts. 3+ years on the tools preferred.
