Counter butcher — Harrison County

Urgent requirement: we are hiring a counter butcher in Harrison County, Iowa. You will be based at a wholesale meat market. Day-to-day duties: • Sharpen and hone knives on a steel and whetstone • Break down beef, mutton and chicken carcasses into primal cuts • Monitor chiller and freezer temperatures to keep the cold chain • Keep HACCP hygiene records and sanitise the block and tools • Keep halal cuts separated and clearly handled Requirements: • Food hygiene / HACCP certificate • Able to use a band saw, grinder and sausage filler Freshers welcome — about 1 years of practice is enough.
