You should have: • Accurate at weighing and following recipes • Able to lift 25 kg flour sacks • Able to work early-morning and night shifts On a typical shift you will score the top of loaves before baking; shape loaves, rolls, baguettes and buns by hand; prove dough in the proofer at the right temperature and humidity; laminate puff and croissant dough by folding in the butter. $5,200 per month, negotiable for the right hands.
