Ideal candidate: • Comfortable working in cold rooms and chillers • Able to identify primal cuts of beef, mutton and poultry Day to day you will sharpen and hone knives on a steel and whetstone; dress the chilled counter and rotate stock by date; mince meat and prepare keema on the grinder; season and marinate meat on request; run the band saw to cut cleanly through bone; monitor chiller and freezer temperatures to keep the cold chain.
