Day to day you will hand-wash pots, pans and trays using the three-sink wash-rinse-sanitise method; empty bins, take out the rubbish and break down cardboard; polish glasses and cutlery and stack them ready at the pass; mop the floors and wipe down kitchen surfaces and splashbacks; scrape leftover food off plates and pre-rinse before loading.
