The role involves: • Vacuum-pack and wrap customer orders • Run the band saw to cut cleanly through bone • Monitor chiller and freezer temperatures to keep the cold chain • Sharpen and hone knives on a steel and whetstone You should have: • Able to identify primal cuts of beef, mutton and poultry • 2+ years experience working as a butcher • Able to use a band saw, grinder and sausage filler Six days a week, one day off.
