Confectioner — Nacogdoches County

Immediate opening: we are hiring a confectioner in Nacogdoches County, Texas. You will be based at a cake shop. You will laminate puff and croissant dough by folding in the butter; load and unload the deck oven with a peel; rotate stock and follow FIFO on raw materials; boil sugar syrup for glazes and icing; knead and develop dough by hand and in the spiral mixer. Ideal candidate: • Basic cake decorating and piping skills • Familiar with deck, rack and convection ovens • Able to lift 25 kg flour sacks $29 per hour, negotiable for the right hands.
