Day-to-day duties: • Run the band saw to cut cleanly through bone • Mince meat and prepare keema on the grinder • Vacuum-pack and wrap customer orders • Sharpen and hone knives on a steel and whetstone • Stuff and link fresh sausages with casings You should have: • Food hygiene / HACCP certificate • Physically fit to lift carcasses and stand all day • Quick and accurate on the weighing scales and order maths Freshers welcome — about 5 years of practice is enough.
