You should have: • Food hygiene / HACCP certificate • Quick and accurate on the weighing scales and order maths • Confident knife skills and safe blade handling Day to day you will stuff and link fresh sausages with casings; sharpen and hone knives on a steel and whetstone; keep halal cuts separated and clearly handled; debone shoulders, legs and loins with a boning knife; monitor chiller and freezer temperatures to keep the cold chain; take customer orders and advise on cuts and cooking.
