We are recruiting: we are hiring a head butcher in Monroe County, Michigan. You will be based at a wholesale meat market. Day to day you will sharpen and hone knives on a steel and whetstone; break down beef, mutton and chicken carcasses into primal cuts; keep HACCP hygiene records and sanitise the block and tools; portion steaks, chops and cutlets to the ordered weights; weigh, price and label cuts for the display case. Ideal candidate: • Physically fit to lift carcasses and stand all day • Knowledge of halal slaughter and handling where required • Comfortable working in cold rooms and chillers Pay around $4,700 per month, based on your experience.
